Chocolate Zucchini Cake
  • 1 ½ Cup sugar
  • 2 eggs
  • 1/2 Cup plain yogurt or sour cream
  • 1 tsp vanilla
  • 2 1/2 cup Flour
  • 1/4 Cup baking cocoa
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups shreaded summer squash about 1 pound
  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips
Directions
1. Preheat oven to 350*. 2. Grease a 9x13 pan and set aside. 3. Whip butter and sugar until light and fluffy. 4. Add eggs one at time mixing after each egg. 5. Add yogurt and vanilla; mix well. 6. Add flour, cocoa, baking soda and salt; mix well 7. Fold in squash, walnuts and chocolate chips. 8. Pour into prepared pan and bake for 35 – 40 minutes or until a toothpick inserted into the center comes out clean. 9. Cool completely on a wire rack before frosting and cutting into squares. 10. optional- add powdered sugar for flavoring.
