Lemon Thyme Rice
  • 1 Tbs Butter
  • 3-4 Strands vermielli, broken in small pieces
  • 1 Cup uncooked white rice
  • 1 (14.5 oz.) Can chicken broth
  • 1 Tbs Fresh lemon juice
  • 1 Tbs dried thyme
Directions
Melt Butter in a medium saucepan over medium-high heat and stir in the vermicelli. When brown, add the rice., stirring frequently, until browned, about 5 minutes. Add chicken broth and water and lemon juice to make 2 cups. pour in rice and add thyme. Cover and reduce heat to low. Cook 25 minutes, until liquid has been absorbed. Fluff with a fork before serving.
