Dandelion and Zucchini Saute
  • 1 bunch of dandelion greens
  • 1 zucchini - cut in half and sliced
  • 8 oz sliced mushrooms
  • 1/2 red onion, sliced
  • 2 tbsp. olive oil
  • 2 tsp. chopped garlic
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. red pepper flakes
Directions
Cut ends of dandelion and cut greens into thirds. Bring a medium pot of salted water to boil. Add dandelion greens and cook for 3 minutes. Drain into a colander. While blanching greens, heat oil in a large skillet and add onions and garlic. When onions begin to brown add zucchini and mushrooms. Cook until golden brown, add seasoning and drained dandelion greens. Toss to mix and heat through. Serve immediately.
