- German Apple Pancake

- 6 tbsp butter
- 2 tsp cinnamon
- 1/4 cup brown sugar
- 4 eggs
- 1 cup flour
- 1 cup milk
- 2 large Granny Smith apples, peeled, cored and thinly sliced
- Directions
- Preheat oven to 425° In 10" iron skillet, melt butter over medium heat. Stir in cinnamon and brown sugar. Slice apples into skillet and cook stir until apples are transparent, about 5 minutes. Place skillet, uncovered into 425° oven while you mix batter, about 5 minutes. In blender whirl eggs and flour until smooth; blend in milk. Pour batter evenly over apples in pan. Bake uncovered until pancake is puffy and golden approximately 15 minutes. Dust with powder sugar and let stand 5 minutes. Cut into wedges.

Lemon Thyme Rice
Melt Butter in a medium saucepan over medium-high heat and stir in the vermicelli. When brown, add the rice., stirring frequently, until browned, about 5 minutes. Add chicken broth and water and lemon juice to make 2 cups. pour in rice and add thyme. Cover and reduce heat to low. Cook 25 minutes, until liquid has been absorbed.
